What do you look for in a Coffee House / Sandwich shop?

What do you look for in a Coffee house / sandwich shop in sect of preference - price , service , decor , location , ethics(square trade etc.) , brand image.
Cleanliness and hygiene are very powerful as is service, helpful friendly staff are what mostly encourages official customers.
I like to be able to chose my own sandwich filler and combination. I hate it when you have to chose from a set sandwich menu.
