For several years before that, Josh was a hardworking and unpublicized chef, toiling 50 hours a week at a midtown Sacramento restaurant. Plug was a newcomer to fine dining. The youngest of 10 children, she had a mama who served things like instant mashed potatoes, and, she says with a crow, "was the world's worst cook." To Jade, food was a necessity.
